What we originally anticipated to be an exciting, insightful afternoon checking out the behind-the-scenes magic of a Korean variety programme turned into a long waiting game in a hotel lobby.

Here’s what happened: we, along with a number of other local media, were invited to observe the filming of tvN production Wok the World – which premieres on November 26, 10.30pm on Viu – at Equarius Hotel in Resorts World Sentosa with Thai-American K-pop hunk Nichkhun. However, at the last minute, we were told that the session was no longer open for coverage as the Korean team “did not want any disruptions”, as conveyed by the local organisers.

Bummed that we were unable to witness Nichkhun in action, we - together with other journalists, photographers and videographers - were left “stranded” for the next two hours as we waited for the next programme, the group interviews.

Finally, after what seemed like an eternity, a few of us were ushered to one of the luxurious villas to speak with the 2PM member. While waiting for our turn outside, one of the 30-year-old star’s managers came to make sure we were aware of exactly which two questions (we had submitted about 10 in advance) we were permitted to ask.

This domineering display of control continued even after everyone was seated and ready to go.

The management spent five minutes debating whether to allow Nichkhun to hold our Toggle microphone during the interview. In the end, they agreed that he would do so while answering our questions, and put it down on the table in front of him the rest of the time.

All frustration evaporated when Nichkhun himself entered the living room, seemingly unaware of all the brouhaha. The singer-actor was friendly, talkative and not at all a big-headed hotshot as he addressed an array of topics, most of which had something to do with either cooking or eating (after all, Wok the World centres on two chefs’ culinary quest).

Despite being praised for his kitchen skills in an episode of variety show Galileo, Nichkhun was very humble when talking about the quality of his home-cooked meals, saying things like, “My favourite dish [to cook] is Gai Pad Krapow (Thai Basil Chicken), but it tastes okay, I think”, “[My Thai omelette] is not perfect but it’s a lot better now” and “[My cooking] is decent, edible”.

When everyone had exhausted their extremely short list in just 10 minutes, we decided to take a chance and pipe up, “You’re very modest about your cooking skills.” Although we braced ourselves for someone to berate us for daring to venture out of the approved list of questions, it didn’t happen. Whew.

“I’m not modest; I’m just scared [to say I’m good at cooking] because I always cook and eat alone,” Nichkhun responded with a smile. “And I don’t know if this can go on air, but I usually open a bottle of wine when I start cooking, and by the end of the cooking session I’m pretty much up here (Raises hand next to head to indicate drunkenness level), so everything just tastes good at that point! (Laughs)”

To us, having such a candid confession conclude the day’s chain of highly restricted events just made everything all better. Oh, and Nichkhun, you can cook for us anytime.

Who’s the best cook in 2PM?
Out of all of us, I think I’ve eaten Taecyeon’s tteokbokki (rice cakes), Chansung’s ramyeon (instant noodles), and Jun. K’s tteokbokki as well. That’s all they cook!? (Laughs) It doesn’t seem like it, but Taecyeon is actually pretty good.

What dish are you most confident in making?
I make a lot of pasta and steak, but my favourite is Gai Pad Krapow, but it’s hard to find the right ingredients in Korea.

Describe yourself as an ingredient or dish.
How about an onion? (Laughs) Not because of the way it smells, but because there are a lot of layers, and the more you peel it, the more you cry – the more you know me, the more you’re going to cry. (Laughs) There are a lot of layers to me, I can be very adaptable, so I think an onion is suitable.

What’s your ultimate guilty pleasure when it comes to food?
Jellies, gummy bears, chewy candies. I have a lot of snacks at home but I never really eat them, I only eat the candy. And sometimes ice cream. I’d take a pint and watch Netflix while gulping down on it.

What’s your favourite Singaporean dish?
I tried carrot cake at Lau Pa Sat today, and I really liked it because it reminded me a lot of Thailand’s Pad See Ew (stir-fried noodles). I’ve made it at home before, so I think I might be able to recreate this carrot cake.

What’s your go-to comfort food after a long, stressful day?
Instant noodles? (Laughs) Or a burger. I don’t make it, but it’s easy to eat and it reminds me of the time I spent in America. I eat a burger once or twice a week.

What’s the first dish you ever learned to cook?
I think it was a Thai omelette, but I burned it. (Laughs) I thought I needed to heat up the oil, so I cranked up the fire until it was really hot and was waiting for it to bubble, but when it didn’t bubble, I turned [the omelette] over and it was all black. That was a fail. (Laughs) I was probably around 13 or 14 at that time.

You’re about to release your first solo album ME, including the title track ‘Lucky Charm’. What’s your personal lucky charm?
Probably my fans, friends and family, the people who love me, because without them I wouldn’t get to this point in my life. This album is like a gift to my fans and that’s why I worked so hard to write all the songs. I named it ME because I want them to know that this is me, this is music that I like. It’s my first self-composed album and it’s going to need a lot of work, but I hope my fans like it.
